Keto-Friendly Shepard's Pie

Comfort food. Everybody loves it. There is something about coming home to this kind of meal.

I love cooking healthy meals that are full of flavor for my family. I guess it's one of my love languages. 

With my health challenges and hitting my 50's, I need to focus on a disciplined diet to get this stubborn weight off. A keto diet is also good for the gut and brain, so it's a win-win for our entire family.

I was really surprised by the creamy taste and texture of the faux-tatoes. My son didn't even realize he was missing potatoes! If you have picky eaters this may be a great dish to try on your family. The cheddar cheese topping really makes this dish! 

Ingredients:
Meat filling:
1 1/2 pds organic beef
1 pound organic green beans, trimmed
6 organic carrots, peeled and diced
6 scallions, diced
2 tsp dried parsley leaves,
2 tsp dried rosemary
1 tsp ground thyme
1 1/2  tsp sea salt
1 tsp ground black pepper
2 Tbs tomato paste
1 Tbs avocado oil
(You can add a chopped onion and three cloves of garlic. I omitted due to gut issues.)

Faux-tatoes:
1 head organic cauliflower, chopped
1/2 stick of grass-fed butter
1 tsp sea salt
1 tsp ground black pepper
Splash of creamer (Go easy on the creamer or gets too runny.)
1 package of Trader Joe's Raw Cheddar Cheese, grated

Preparation:
Preheat the oven to 400 degrees.
Faux-tatoes
Fill a stock large pot half way with filtered water and add the cauliflower. Bring to a boil.
Cook on medium high for about 5 minutes or until cauliflower is fork-tender.
Next, strain it in a colander and pour back into the pot.
Add butter, salt, pepper, and creamer.
Mix with hand blender until smooth and creamy.

Meat Filling:
Heat a large cast iron pan on medium-high heat and add the avocado oil. 
Add the beef, breaking it apart, and cook until brown. This takes about 5-6 minutes.
Add the spices, salt, pepper, and tomato paste. Mix well. 
Mix in green beans and carrots and cook for about 5-6 minutes.
Add the scallions and cook for another 2-3 minutes. 

Pour the faux-tatoes over the meat mixture and spread evenly. Top off with the shredded cheese.
Bake uncovered for about 30 minutes. Let cool for about 10 minutes and devour. Enjoy!
(You can use a 9x9 baking pan if you don't have a cast iron pan.)
